Today it warmed up a bit, pretty much melting what snow has fallen recently. Oh well. I know there are tons more of it to come in time, hopefully before Christmas.
I had a nice visit today with a Japanese friend of mine. I love talking and learning about the Japanese culture. I could talk about it for hours on end,lol.
Christmas is almost here! Are you ready yet? We will be wrapping our gifts mid week and we like to have them under the tree for 1 week to look at before Christmas.
Let’s talk more candy! I have to admit I love candy and at Christmas time, it’s something I indulge in a little. Over the weekend I made this Christmas rock candy. It is wonderful. It is perfect in many ways. Of course you can tailor it to your tastes with the flavor and color.
We, my husband and I chose green and he wanted to flavor it root beer. So, we did. It is so delicious. It was fairly easy to make, I think it worked well to have a candy thermometer but if you have another method that works best for you, use it.
It took a little work to “break” it apart and it was a little messy but lot’s of fun! After you are done, watch out for sharp edges on your candy. You can always make the ends blunt or just not serve them to children,lol. We did not bother doing anything special to the edges but you can decide for yourself what will be best.
Make sure to not skip the step of tossing the candy in some powdered sugar, it helps keep the candy from sticking to each other. Super yummy and fun to make, go make some!
Merry Christmas!!
- 3¾ Cup Sugar
- 1 Cup Light Karo Syrup
- 1 Cup Water
- 1-2 Teaspoons Flavoring: I used Root Beer
- Food Coloring (optional)
- ⅓ C. Powdered Sugar
- Line a baking sheet with parchment paper.
- Combine sugar, syrup, water and color in saucepan, dissolving the sugar as much as possible.
- Bring to boil and reduce to medium, let simmer until the candy thermometer reads 302 degrees. (45 minutes)
- Remove from heat, add your flavor. The mixture will bubble and shoot up some steam, this is normal.
- Pour mixture onto prepared pan and cool completely. The time on cooling will depend on many things, it took over 1 hour for mine to fully cool.
- Break candy into pieces.
- Add your powdered sugar to a zip-loc bag, add the candy and shake to coat.
