Welcome To Day 11 Of “25 Days Of Christmas Sweet Treats”!

Last night we had some hellacious wind storm come through. It started off not too bad but I eventually had to shut off our outdoor Christmas display for fear of our blow-up Santa taking flight!
By the time I went to bed, and it was pretty late we had winds upwards of 60mph! I made for a rough night of sleep, all the wind howling and things whirling about.
Now we are gearing up for what should be our first really good snowfall of the season! We’ve had a few inches here and there but I mean, serious snowfall, I am hoping several feet! It is supposed to start snowing tonight and go till Monday, I can only hope,haha!
These bars are delicious and if you let them sit out over night, to allow for the flavors to all meld and deepen, you may just be surprised at how much flavor these pack!
You can also use any chocolate chip but since I am doing Christmassy sweet treats, I chose to use my holiday themed morsels and I also love the pop of color they create.
If the spices are too strong for you, you can also use less of each but I would recommend trying them as is first. These are very fudgy, moist and will keep well on the counter for up to one week.

- ½ Cup Unsalted Butter, melted
- 1 Large Egg
- 1 Cup Light Brown Sugar, packed
- ½ Cup Unsulphered Light or Medium Molasses
- 1 Tablespoon Vanilla Extract
- 3 Teaspoons Ground Ginger
- 2 Teaspoons Cinnamon
- 1 Teaspoon Ground Cloves
- 1 Teaspoon Ground Nutmeg
- Pinch Salt, optional to taste
- 1¼ Cups All-Purpose Flour
- 1½ Cups Semi-Sweet Red & Green Holiday Chocolate Chips, divided
- Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
- In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
- Wait momentarily before adding the egg so you don't scramble it. Add the egg, brown sugar, molasses, vanilla, ginger, cinnamon, cloves, nutmeg, optional salt, and whisk until smooth.
- Add the flour and stir until just combined, don't over mix.
- Stir in 1¼ cups chocolate chips.
- Place into prepared pan, smoothing the top lightly with a spatula.
- Evenly sprinkle remaining ¼ cup chocolate chips over the top, pressing them down very lightly with a spatula.
- Bake for 30-35 minutes or a little longer for a dryer bar. I baked mine for 35 minutes.
