I’ve been looking forward to baking this loaf for a few weeks now. I love just about anything lemon and love the smell of it even more. I did not anticipate having any issues with this recipe. The recipe was simple, straightforward and it really only took about 5 minutes to whip up as long as you made sure to bring several of the ingredients to room temperature and have your lemons zested.

The least fun part for me was getting the zest from the lemon. My hubby was kind enough to take over doing that while I measure out and started putting it the rest of the ingredients together. The recipe stated to “butter” the loaf pan then flour it but instead I used my baking spray with flour. At first I was not sure if there would be issues and there was not.

It came together nicely and it smelled amazing even before it started baking. My oven can be tricky at times but it came out perfect at 55 minutes. It was a little darker than I expected it to be, at least the edges but no matter, it was not burnt, it looked and tasted wonderful! It says to cool the loaf but when it comes out of the oven so hot and lemony, it is hard to resist cutting into it immediately but give it a while.

It also tastes great several days after baking, as long as you wrap it tightly in plastic wrap.

  1. yours does look a little bit darker around the edges.. i wanted mine to be a bit darker.. would have liked it a bit more lemony though!!

  2. My cake browned like that too, though I liked it that way. If you have trouble zesting, I highly recommend a Microplane. It makes zesting easy work, much easier than other gadget I’ve tried. Nice job!

  5. I enjoyed the ease of this recipe. Your loaf looks like it rose beautifully. Mine was a bit flat, but tasty all the same. A keeper.

  6. I discovered the same that it tastes even better a few days later. We loved the dark edges because it gave a nice texture and taste while eating the cake Your slices look so pretty.

  7. I lined my pan with buttered parchment for one version. The crust was a little prettier and lighter but it didn’t rise as high.

  14. Ours was quite brown, too, but not at all burnt. We really enjoyed this cake. Yours looks lovely!

  15. Love the baking spray with flour. I always automatically use that. My edges were brown too but I think that was my pan.

  16. Someone who had the cake at my house also mentioned it could have been even more lemony. I was happy with the way it turned out. Great job.

  17. Mine had a dark crust too, but not burnt.. I liked it more toasted..

  18. Your cake looks great! I can also highly recommend the Microplane zester/grater that Betsy mentioned. It is the best tool for lemon zest. You can find it on Amazon.

  22. I think your cut pieces look lovely and moist. I also left my loaf, wrapped in a towel, overnight and the flavors, the next day, were subtle but perfect, in my opinion. This was fun, wasn’t it. I LOVE simple. And, yes, the zesting was the hardest part of this entire recipe. Nice that your husband could step up to the plate. Mary

  25. I’m a big fan of hubby delegation too. As long as we’re totally clear about who is the executive chef and who is sous chef (it alternates daily), we have no problem. Our Master of The House really enjoys his kitchen gadgets, so he played the role of Master Zester on this one, and we whipped it out in 15 minutes. That’s my kind of recipe!

  27. I baked mine in a round cake pan, however I put parchment paper on the bottom of the pan. My oven acts funny at times and I was worried around browning the cake too soon and too much:) I have seen some folks put a parchment around the diameter of the pan to prevent the burning of the sides.
    The color of your loaf is a lovely yellow!
