I hope that everyone had the best Easter they could with the way the entire world is right now!
I’m trying to keep things from the darker side of life currently but that is hard because I am living in Italy. It is rough because, rules, laws, restrictions seem to change sometimes daily and can be a bit confusing…and of course frustrating! I know so many of you out there, no matter where you live can totally relate too.
On a much happier note, I have had much more time to bake and give to others, respecting social distancing rules. Bake people happy if you can!! It will make you feel better and those who receive happy. We will one day look back upon these times and think what great opportunities we had to love people more, because we had the time to put into it and focus more on things we may sometimes put on the back burner due to daily life, work, family…responsibilities. Not to say we do not have those things pressing now because many still do…but we need to appreciate what we DO have, while we can.
These might seem or sound like a fall time cookie but these just warm the soul and we all need a bit of that right now! They are chewy and are the perfect comfort dessert all year long!
- 2 Cups Flour
- 1 Tablespoon Ground Cinnamon
- 1 Teaspoon Baking Soda
- ½ Teaspoon Salt
- 1 Cup Butter, softened
- 1 Cup Packed Light Brown Sugar
- 1 Cup Granulated Sugar
- 2 Eggs
- 1 Teaspoon Vanilla
- 2 Cups Quick-cooking Oats
- 1 Cup Raisins
- Preheat oven to 350
- Mix flour, cinnamon, baking soda and salt in medium bowl. Set aside. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in oats and raisins.
- Using a cookie scoop, drop onto un-greased cookie sheets or parchment paper.
- Bake 10 to 12 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
